You will need:
2-3 ripe mashed bananas, 1/3 cup melted unsalted butter, 1 egg, lightly beaten
Directions: Preheat oven to 350° F and prep your muffin tin. In a medium bowl, mix the mashed bananas, butter, eggs, and vanilla. Add the dry ingredients to the wet ingredients and mix just until combined. Pour batter into the muffin pan, filling each 3/4 of the way. Bake for 20-25 minutes. Insert a toothpick into the middle of a muffin. If it comes out clean, your muffins are ready!
Yield: 12 Muffins.
